One truck, one grill, and a stubborn belief that fast food can still be real food. Here's how Curb got rolling.

How it started

It began with a beat-up truck and a borrowed griddle.

Back in 2018, our founder Maya bought a rusty old delivery truck, cleaned it up, and bolted a flat-top grill inside. The first menu was three items long and the first day's "line" was four curious neighbors.

Word got around fast. Turns out people will walk a long way for a smash burger that actually tastes like beef and fries that are still crunchy. A few years later we're parked somewhere new almost every day โ€” but the rule hasn't changed.
